An easy and delicious recipe for your next barbecue: Grilled Chicken and Pineapple Skewers!

While I have the staple recipes that I make all summer long like Pizza on the Grill, Zucchini Pasta, Cherry Caprese Panzanella Salad, and Corn Avocado Salad – I always like to add one or two new ideas to the rotation each year.
So, I was gung-ho when ALDI asked me to showcase a few of their cookout-friendly recipes in a blog post along with many of their budget-friendly, fresh food options.

Here are four ALDI summer recipes that are great options for outdoor eating. I recently featured them on WPHL-TV along with the latest and greatest ALDI Finds (go buy them now because once they’re gone, they’re gone!)
Grilled Chicken and Pineapple Skewers with Lemon-Cucumber Salsa
Anytime I can get another fruit or veggie serving in a recipe, I’m in. This flavor combo is not only delish but it’s super easy to make. And the lemon cucumber salsa reminds me of all the incredible side salad dishes you get at every meal in Israel – cool, refreshing, vibrant but simple to make.
And I love that ALDI also sells pre-cut and sliced fruit (like pineapple) but without a premium price tag for the convenience along with a vast array of other fresh food options like ready-made salads, hummus, guacamole dips and organic produce.
Paprika Cauliflower
Dietitian confession: I don’t really like cauliflower. BUT I warmed up to it in Israel when it was fire roasted, drizzled in olive oil and seasoned with Mediterranean spices. After making this recipe (and adding some smoked paprika into the spice combo of Stonemill Ground Cumin, Chili Powder, Salt and Black Pepper), now I think I have to say I like cauliflower after all.
Backwards S’more Bars:

Fruit Salad Kebabs:
Whenever I serve a decadent dessert like the bars above, I also serve fruit. I’m a big believer in serving fruit WITH the treat vs. INSTEAD OF because let’s face it, when you want something chocolatey, apple slices alone aren’t going to cut it. But I find when I serve both, people definitely go for the fruit, too.

ALDI features nearly 100 unique products each week often with a theme tied to the season, so right now this is the aisle to check out for summer entertaining on a budget. On my most recent visit, I spied reusable straws, pool floats, cooler bags and camping equipment.
And I may have come home with some refrigerator liners and a cat bed. #ALDILove

Isn't grilled pineapple like the best thing ever! We always add it to our skewers. Will be trying this lemon cucumber salsa as an addition next time for sure.
