This recipe was inspired by my one of aunt’s “I’ll just whip up some yummy appetizers practically out of thin air” recipes (seriously, she has that knack when it comes to food and entertaining.) This was just one of the many kitchen creations she made during our summer visit to Seattle – we were spoiled during that trip for sure.
But I really thought this was genius: take a fairly healthy appetizer – hummus – and up the flavor, color and nutrition with a bunch of veggies.

So, when Libby’s decided to sponsor a Recipe ReDux contest to create 10-minute “Starters and Sides” using their new vegetable pouches, I knew I was going to recreate this hummus dip.
So, here’s the scoop: Libby’s brand new vegetable pouches are available now in select Walmart stores and come January 2015, you’ll be able to find them nationally. Pouch perks include:

Vegetable varieties include: sliced carrots, sweet peas, cut green beans, mixed vegetables and sweet corn, which I used in this recipe.
Now, I was going to make my own hummus but I got lazy ended up buying some at Trader Joe’s (ultra creamy and delish.)
So, really, the most complicated thing about this whole recipe is chopping up the veggies.
You start with the hummus on bottom, then add a layer of heated corn, another layer of chopped cucumbers and bell peppers, a layer of feta cheese and finish it off with a handful of sliced olives.

Layered Veggie Hummus Dip
- Yield: 12 -16 servings 1x
Description
Load up your favorite hummus with a colorful array of veggies for extra flavor and health in this quickie appetizer.
Ingredients
- 4 (6-inch) pita bread rounds
- 4 teaspoons olive oil
- 2 cups hummus
- 1 (13 ounce) pouch Libby’s Sweet Corn
- 1 1/2 cups chopped sweet bell pepper (about 2 small or 1 large)
- 1 cup peeled and chopped cucumber (about 1 small)
- 4 ounces cubed feta cheese
- 1/2 cup sliced black olives
Instructions
- Heat a large grill pan over medium high heat coated with cooking spray. Add two pieces of pita bread and brush with 2 teaspoons of olive oil. Grill for about 2 minutes (until grill marks appear), flip and grill another few minutes. Remove from pan and repeat with remaining pita. Cut each pita into eighths.
- In a shallow serving dish, spread out hummus on bottom of dish.
- Heat Libby’s corn in microwave for 50 seconds. Drain and layer over hummus.
- Layer bell pepper, then cucumber and then feta. Sprinkle with olives and serve with warm pita wedges for dipping.
Scoop it up with grilled pita wedges and you get warm, cool, crunchy and creamy all in one bite.
Not only a great appetizer for upcoming holidays and football game days, but this dip is makes a mighty tasty lunch, too. (Yes, I speak from experience.)
