Pair pistachios with just about anything including pears and these simple homemade blue cheese crackers ~

I generally don’t cook dinner on Sunday nights; we have what my kids call a ‘scrounge-around-for-dinner” night. They are allowed to paw through the refrigerator or pantry to find a fruit, veggie, can, bottle or resealable container of something to contribute to dinner. They love it!

Sometimes dinner is olives, crackers, frozen homemade Lemon Blueberry Muffins and hard boiled eggs. Sometimes it’s apples, bananas, grapes and tuna. It’s not always perfectly balanced, but the new combination of foods is half the fun for the kids.

And that’s what was fun about the latest Recipe ReDux challenge by the Pistachio Health Institute: The combinations of in-shell pistachio pairings that have emerged this week are new and delicious…and fun. (See all the links below!)

While I’d like to say I thought long and hard to come up with my perfect pairing, all I really did was scrounge around through my cabinets. Because, after all, what DOESN’T pair with pistachios? Here’s what I found:

Homemade Blue Cheese Crackers – I made this deliciously simple recipe from Relish magazine (which I adapted by using half whole wheat flour) for a New Year’s party and froze some of the extra dough. So I pulled it out and baked them up.

Dried plums – The sweet, soft fruit with the crunchy roasted pistachios was ideal.

Pears – In season now, they provided freshness to this pairing. (I might add they are also, as my kindergartener pointed out, the third item to begin with the letter ‘P’ in this Perfect Pairing of Pistachios, Pear, and Plums!)

49 Pistachios – Yup, 49 in-shell pistachios is a serving size; more per serving than any other snack nut! So Crack ‘em, Chew ‘em, Love ‘em, Leave ‘em (now isn’t that a fun “Pistachio Principle” to say?!) Empty pistachio shells may serve as a “visual cue” of how many pistachios are consumed, so don’t discard the shells after enjoying the treat inside.
