Ahhh, the day after Thanksgiving. As I wrote in this post last year, leftovers are one of my favorite parts of Turkey Day. And since there are many leftover turkey recipes floating around out there, why not instead have a round-up on what to do with all of those orange veggies – the sweet potatoes, butternut squash, acorn squash, pumpkin, yams – you may have leftover. If they aren’t already pureed, whip them up in a blender and give one of these recipes a try:
Post Thanksgiving Squash Pudding – Why should pumpkin always have the dessert spotlight?
Sweet Potato Grits – Created by the Southern-Wanna-Be in me
Acorn Squash Chili – Pureed squash adds flavor, thickness and nutrition to any chili recipe
Squash Honey Date Muffins – A surefire way to get the kids to eat more squash
Ginger Carrot & Sweet Potato Bisque – The bonus with this recent post? It’s part of a round-up of over 60 orange veggie recipe ideas (courtesy of members from The Recipe ReDux!)
What’s your favorite Thanksgiving leftover? Any creative leftover ideas you’d like to share?

I have a bunch of sweet potatoes left over from yesterday and love the idea of making grits! Great roundup :)

Those little toes (with a sticker on them) make me smile too. As did the warm fall weather when I took this photo. Happy Thanksgiving Liz!!
