In the summer, who isn’t about keeping it simple in the kitchen? It’s either too hot to cook or too beautiful outside to waste hours with meal prep. But this doesn’t mean we have to sacrifice enjoying good eats and drinks as this dessert/beverage refresher proves.

These slushies came about from my 8-year old’s love of watermelon juice with a squeeze of lemon or lime (probably because she loves using this lemon squeezer I bought a few years ago.)

And since she also gets a kick out of making homemade lemonade – and I love not having to squeeze 20+ lemon halves myself – it was only a matter of time before I blended these two drinks together.

I saw recipes for Bourbon Slushes around Kentucky Derby time but they all used frozen lemonade concentrate and I’d rather control how much sugar is in my fruit drinks when possible.

I originally was going to make these slushies with bourbon but I knew my daughter would want to try them so I went with the virgin version instead and was glad I did. We enjoyed these for dessert for 2 days straight.

I haven’t given up on the bourbon version yet, though I might go ahead and “slushify” these Watermelon Margaritas or Watermelon Mojitos next.

Watermelon Lemonade Slushies

Description

Take your summer watermelon to a new refreshing level with these watermelon lemonade frozen treats.


Ingredients

Scale
  • 3 1/2 cups chopped watermelon
  • 1/4 cup sugar
  • 1 3/4 cups water, divided
  • 1/4 cup fresh lemon juice (from about 4 small lemons)

Instructions

  1. To make watermelon juice, blend chopped watermelon in a blender until it turns to liquid. Strain through a fine mesh strainer (you’ll want about 2 cups of watermelon juice.) Set aside.
  2. To make lemonade, make a simple syrup on the stove in a small saucepan by whisking together sugar and ¼ cup water. Place over medium heat and heat until just simmering and sugar is dissolved. Remove from heat and let cool a bit.
  3. Whisk in lemon juice.
  4. In a freezable container, mix together watermelon juice, lemonade and remaining 1 1/2 cups of water. Place in freezer and freeze overnight.
  5. Before serving, let sit on the counter for about 10 – 15 minutes until it thaws a bit. Chip at it with a butter knife and then scoop with ice cream scooper into four glasses. Serve with spoons.

I love the sound of these slushies! Deanna, it reached a 100 here in Atlanta on Saturday and I wish I had one of these to slurp on! Thanks for the info on Yummly - am looking into the Yummly Publisher thing asap..
