I recently got a fun surprise in my CSA share – popcorn still on the cob! This is definitely more than just a fall decoration.
Popcorn is easily my go-to favorite snack. I eat it at least 2 -3 times a week, perfecting the stovetop popping over the years (you’ll never go back to microwave popcorn after doing the pot method.) After a few twitter convos with some of my fav RD bloggers – Inspired RD, Eat Well With Janel & Whole Health RD – I’m now a convert to popping it in a little bit of coconut oil and sprinkling with some truffle salt. Heaven.
This inspired me to do a little popcorn recipe round-up with recipes from both me & Serena as well as a few other favorite bloggers. And a fun nutrition fact, popcorn is a whole grain! Happy popping!
