I had all intentions of making these into bars to put on the holiday cookie tray but alas, the popcorn, peanut butter, peanut, dried fruit and honey mixture didn’t quite gel thus resembling more of a Cracker Jack like product. Which still resulted in a very delicious snack and pretty enough for packing in a festive tin for gift giving. Or perhaps Santa would enjoy this as change from the usual cookie plate. (This snack’s combo of healthy fats, protein and whole grain popcorn would do him good for his long night.)

I think it tastes best with popcorn made on your stovetop. You can switch out the nuts and dried fruit for any flavor and color combo you like.

Popcorn Peanut Butter Crunch


  • Yield: 8 - 10 servings 1x

Ingredients

Scale
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 8 cups popcorn, popped
  • 1/4 cup roasted peanuts
  • 1/4 cup dried cherries

Instructions

  1. In a large pot, heat peanut butter and honey over medium heat until melted. Remove from heat and carefully mix in popcorn, peanuts and cherries until well coated.
  2. Spread into a 9×9-inch baking pan lined with parchment paper.
  3. Chill in refrigerator for 1 hour before serving.

We've mixed the honey and peanut butter together for popcorn before, but have never added nuts and dried fruit - what a great idea! Thanks!

It's so good and the combos are endless - next up I want to try cranberries & pistachios.
