How to Make Gluten Free Chicken Nuggets

The easiest homemade chicken nuggets – ever – gluten free if you choose. ~

I know the location of every McDonalds with a Playland on the 557-mile route from our house to my inlaws’ in Michigan. But it was just last week that I learned where the second McDonalds was in our town.

On the nine hour trip to Michigan – when I don’t think I can handle another minute in the mini-van with four kids, when I’m completely out of “I Spy” ideas,” and just when all kids no longer care about the license plate gam (OK, they never care about license plates)…Just then is when a Playland appears. And I’m thankful. All four kids run inside and jump and yell and scream and exercise to my heart’s content. Yes, we usually get lunch there too – often a hamburger (gluten free without the bun.) The hamburger plus bun is a good source of protein, iron and zinc. It has 250 calories, 12 g protein, and importantly 15% of the DV for iron. Occasionally the kids get 4 Chicken McNuggets + BBQ sauce with 240 calories, 9 g protein, and 2 % of the DV for iron.

How to Make Gluten Free Chicken Nuggets

Those Chicken McNuggets are the only chicken nuggets my 6-year-old daughter has ever eaten. (I’m sure Ronald McDonald marketing has something to do with it.) Until now. Thanks to the latest Recipe ReDux member recipe challenge – sponsored by Dare Foods in honor of Celiac Disease Awareness Month – my daughter discovered she loves chicken nuggets breaded with Breton Gluten Free Herb and Garlic crackers. (And I discovered I loved snacking on the yummy herb + sesame flavored crackers.)

My dear 6-year-old adores our meatless meals and will eat asparagus any day – she will rarely eat meat. This is actually not unusual for kids: Often they may feel the amount of chewing meat requires just isn’t worth it. As a result, kids don’t always meet nutrient requirements for iron, zinc and some B vitamins – nutrients found mainly in meat. That’s why I’m OK with an occasional stop at McDonalds (obviously we don’t drive 9 hours OFTEN!) And that’s why I’m also OK with making ‘kid-friendly’ meaty meals, i.e. nuggets.

Gluten Free Chicken Nuggets


  • Yield: 6-8 servings 1x

Ingredients

Scale
  • 1/2 cup light mayonnaise (Hellman’s is gluten free)
  • 1/2 cup low-fat milk
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups crushed Breton Gluten Free Herb and Garlic crackers, (about 20 crackers)
  • 2 pounds boneless skinless chicken breasts, cut into 1-inch cube-like pieces

Instructions

  1. Line two baking sheets with parchment paper. Preheat oven to 400°F.
  2. In a large bowl, whisk together the first five ingredients.
  3. Place ONLY 3/4 cup of the crushed crackers in a gallon-sized zip-top plastic bag.
  4. Add HALF of the chicken cubes to the mayonnaise mixture and toss gently. Using a slotted spoon, transfer the chicken to the zip-top bag and shake to coat all pieces of chicken. Remove the chicken and place on a prepared baking sheet. Repeat with the remaining chicken and crushed crackers.
  5. Bake at for 8-10 minutes on each side or until chicken is no longer pink and crackers are beginning to turn golden.

Chicken nuggets!! I love them so much. I have used the brown rice krispies in the past but the Breton gluten free crackers have so much flavor! What a great idea! Since I am totally loving these Bretton Crackers, I can imagine they make super tasty chicken nuggets! I don't think it's difficult to eat out gluten-free {however may be a lot easier in San Diego than in your neck of the woods}, but it is definitely a challenge to eat out gluten-free SAFELY, and without cross contamination. BTW, I bet my kids would love these!!

Using the GF crackers as a nugget topping is genius! I'm sure it makes these all kinds of crispy crunchy.
