Ahh, I could do 20 posts on my love of avocados. So, why have I only recently have made them a true staple in my kitchen? In the past, I’d wait for a guacamole craving or a specific recipe using them as ingredient. But now, they’ve earned “banana” status in my fruit bowl – meaning, I have always have a few on hand, ripening and ready for use.
A few years back, I had the good fortune review this lovely book My Sweet Mexico by Fany Gerson. Her avocado ice cream recipe is simple and yet so divine. And avocado is a fruit after all, making it a no brainer for summertime desserts. I finally bought some popsicle molds (after reading Serena’s post) and my adaptation of the avocado ice cream was the first thing I tried.Print
Avocado Lime Popsicles
Creamy avocados are divine in desserts like ice cream or when paired with lime, these creamy, dreamy popsicles.
- Yield: 5 popsicles 1x
- 2 ripe avocados, peeled and pitted
- 1 cup low fat milk or reduced fat coconut milk
- 1/4 cup sugar
- 2 tablespoons lime juice (from one large lime)
- 1/8 teaspoon salt
- Put all ingredients in the blender and blend until smooth.
- Pour into popsicle molds and freeze.
