Tomato Soup Sloppy Joes

How could I forget about Sloppy Joes?

Sloppy Joes were definitely a staple family meal when I was a kid and I always remember they were a given during our week at the lake with all of my cousins. Each family would take a turn to cook and Sloppy Joes were my favorite dinner night.

Fast forward decades later and I can't remember the last time I ate them, let alone MADE them. Enter Secret Recipe Club for inspiration.

This month, I was assigned Heather from It's Yummy To My Tummy. She came up with her blog name from the phrase her daughter would say about her cooking. And as soon as Heather's Tomato soup version of Sloppy Joes caught my eye, I knew I was going to make it.

Tomato soup makes for quick and delicious Sloppy Joes

Trader Joe's Low Sodium Tomato Soup is my go-to, store-bought soup, especially during these colder months when I stock it in my pantry. I also swapped in extra lean ground turkey for the beef (just a taste preference) and freshly chopped onion, red pepper and celery instead of the frozen version (just because I had them on hand - otherwise, frozen veggies are a great staple for your freezer <--- Dietitian's Endorsement.)

And the dietitian in me threw in a can of pinto beans, too (another RD tip: rinse canned beans well to get rid of up to 40% of the sodium.) I got the inspiration from fellow dietitian, Ellie Krieger, and her Sloppy Joe recipe. I mashed up half of the beans and mixed them in at the end.

Tomato Soup Sloppy Joes


  • Yield: 6 servings. 1x

Description

Tomato soup, pinto beans and diced veggies add a nutrition boost to a family favorite meal: Sloppy Joes.


Ingredients

Scale
  • 1 tablespoon olive oil
  • ½ cup diced celery
  • ½ cup diced onion
  • ½ cup diced bell pepper (any color)
  • 1 pound extra lean ground beef or turkey
  • 1 garlic clove, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup low sodium tomato soup
  • 2 tablespoons ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon apple cider vinegar
  • 1 (15 ounce) can pinto beans, drained and rinsed well
  • 6 whole wheat or whole grain hamburger buns
  • Bibb lettuce leaves

Instructions

  1. In a large skillet, heat oil over medium heat. Saute celery, onion and bell pepper for 5 minutes.
  2. Add in ground beef or turkey, garlic, salt and pepper. Break up beef/turkey with wooden spoon and stir every so often. Cook for about 10 minutes or until cooked through (until meat is no longer pink.)
  3. Add in soup, ketchup, brown sugar, Worcestershire sauce and vinegar. Mix until everything is incorporated.
  4. In a small bowl, mash about half of the beans. Add all the beans to the beef mixture and stir well. Cook for about another 10 minutes until everything is heated through.
  5. Serve on hamburger buns and top with lettuce leaves.

I served them on whole grain buns with Bibb lettuce and the next day, took Heather's suggestion of serving them over corn tortilla chips -- nacho style (her daughter's favorite way to eat them.)

Sooooooo good.

Serve leftover Tomato Soup Sloppy Joes over tortilla chips for the ultimate nachos.

  1. I LOVE sloppy joes and love to put a can of beans in mine too. We like to eat them with chips also, gotta have that crunch! These sound awesome!

  3. Oh my goodness these photos are making me hungry for lunch and it's only 9am here! Sloppy Joe's were my childhood in a nutshell and I will never turn one down to this day! It is the ultimate kid food but I feel like adults appreciate the flavors just as much! I love your spin on it with this "tomato spoup" version...pinning and putting on the menu fo this weekend!

  4. The Secret Recipe Club sounds like so much fun! Like most kids, I loved Sloppy Joes when I was growing up. Now it makes me a little sad to say I can't remember the last time I had one. With a recipe like this one, this needs to change ASAP! And I'm really loving the nacho style way of serving them!

    1. It is fun - it's almost like Secret Santa - finding out you are assigned to and then on reveal day who had you and which recipe they made 🙂 I'm telling you, those nachos are going to be a frequent recipe in my rotation from now on!

    1. It's such a great staple (TJ's Tomato Soup) which means I'll be making this recipe more often than not. Of course, I had to add a little greenery, ha!

  7. I love sloppy joes! We used to have them all the time as a kid. We would use the sodium-packed seasoning packet though. This seems like a MUCH healthier recipe 🙂

  10. Thanks for the review! Sorry I am just getting to this today, I usually try and review these on the first day, but my house has been full of illnesses the past few days. This sloppy joes recipe is really such a weeknight staple when we need a quick meal and I am loving the extra beans/protein in it. However, my kids wouldn't go for it I'm sure, weird textures for them... perhaps I could puree the beans up and mix it in with the sauce and I could sneak it in! 😉

  12. The sloppy joes that I grew up on were not good. This recipe looks like it could change my mind! I especially like the nacho style...add a little bit of cheese and that would be perfect.

  15. I do like sloppy joes a lot so I was happy when on moving to New Jersey some friends invited us over for sloppy joes. Can you imagine my surprise when we were served a cold sandwich with turkey, ham, Swiss, coleslaw and Russian dressing on rye! I've been here 15 years now but still can't get used to seeing sloppy joes on a menu only to have it be a sandwich!

    1. Eileen - this is such a great story! I did not know this at all! The sandwich sounds yummy...but it's certainly not a Sloppy Joe - in my humble opinion! But love that a regional food stays 'strong'!
