It was 60° over the weekend. Yippee! (My kids even rummaged around in the bins of stored summer clothes and found some shorts to wear.) March appears to be coming in like a lamb.
And we’re just week’s away from spring but while fresh local produce is still months many days away, I find myself itching to get more green on our plates.
So I’m cleaning out heartier recipes of root veggies and winter squash – and ‘greening up’ our meals.
I’ve been telling my kids, “Look through the fridge to see if you can find something green to add to dinner.” This helps the kids be more in-control of what’s on their plate – and way more interested in eating it. And yes, flecks of green count count too – and so do green kiwis.

Considering we didn't have a winter here in Texas, I guess there won't be much difference weatherwise now that spring is upon us. I'm not quite ready to part ways with my root vegetables..but all these fresh recipes are making my heart flutter and mouth drool ;).
