31 Recipes to Spring Clean Your Diet with Green Eats
It was 60° over the weekend. Yippee! (My kids even rummaged around in the bins of stored summer clothes and found some shorts to wear.) March appears to be coming in like a lamb.
And we're just week's away from spring but while fresh local produce is still months many days away, I find myself itching to get more green on our plates.
So I'm cleaning out heartier recipes of root veggies and winter squash - and 'greening up' our meals.
I've been telling my kids, "Look through the fridge to see if you can find something green to add to dinner." This helps the kids be more in-control of what's on their plate - and way more interested in eating it. And yes, flecks of green count count too - and so do green kiwis.
Here are 31 brand-new ways to 'green' you plate - at every meal - and snacks too:

I'm so ready for warm weather and spring produce! Thanks for sharing my oatmeal recipe 🙂
Your oatmeal is brilliant! Love savory oatmeal...veggies for breakfast.
I love that Spring is here (well, it seriously feels like summer already right now in San Diego!) What a great idea with your kids, do they ever pick out pickles?! I could see my nephews doing that to me. Thanks for including my pasta and hummus recipes!
Ha! Pickle count as 'green' in our family Liz. My fave thing to do is save the pickle juice when the store-bought pickles are gone and add fresh cucumber slices and let sit over night in the fridge. The kids will eat the entire jar in 1 sitting. I like them too - like super fresh pickles!
I love your idea to send the kids to the fridge to pick a green food. I am totally trying that tonight. My kids are sure to get a kick out of that and it may just help get my daughter to actually EAT that green food:) Thanks for including my Mini Spinach and Sweet Potato Fritatta as well!
What yummie good ideas, we need green in this pre spring season
Thanks Bonnie! Green is good.
I have never ever had eggs with sweet potatoes. But thanks to your recipe, we tried it over the weekend. #winner

Sigh, I know Dixya. Our farmers markets are still over 90 days away. Yup, I'm counting!
Considering we didn't have a winter here in Texas, I guess there won't be much difference weatherwise now that spring is upon us.
