This is classic comfort food for a crowd.
This recipe has been on my table three times in the last three weeks. It’s that good.
Plus, it feeds a crowd – and this quick casserole is just what I want to fill my belly with on these cold dreary days. It’s a true comfort food classic – made healthy; but keeping ALL the buttery, cheesy, yummy flavors.
I use a few tricks for making the most of healthy flavors; for instance:
- One variety of potato actually tastes more buttery than others.
- A simple way of mashing potatoes keeps them fluffy, not gluey.
