Did you know September is Better Breakfast Month? (I just found that out myself.) Serena and I are all about breakfast here on Teaspoon of Spice.
Research has shown that breakfast eaters tend to be healthier eaters overall. If you eat breakfast (with a good ratio of carbs, protein and fat), you’ll give your body the energy it needs to start the day (remember you’ve been fasting all night – unless you’ve been sleepwalk eating.) And also you are more apt to get the nutrients, vitamins and minerals you need daily if you eat breakfast.

This is when I get in breakfast ruts – eating the same thing (either toast or oatmeal with PB and banana and a latte) every morning because I do it without thinking.
So, this is a new recipe to help break up my breakfast rut – an on-the-go omelet! It’s a riff off of the Egg in a Hole, Bird in a Nest, Nest Egg – all recipe titles meaning an egg cooked into toast.
Here I made this traditional recipe a bit more substantial (like an omelet) by adding in chopped veggies and shredded cheese.
What I love about this is it takes about 5 minutes to make in the morning (I took 10 minutes to saute up the veggies the night before.) You could also save time and use canned corn, mushrooms and/or beans and skip the pre-saute altogether.Print
