Homemade Whole Wheat Baking Mix *VIDEO*

Bisquick this is not. It’s better. Much tastier, and healthier, IMHO. But I will confess an enduring childhood love for all (Bisquick) recipes beginning with ‘Impossible.’ You too may remember Impossible Pumpkin Pie or Impossibly Easy Cheeseburger Pie. Yes? Wasn’t it just magic how the baking mix sunk to the bottom of the pie to create a crust?

But my Healthy Whole Wheat Baking Mix recently got an upgrade for this year’s Holiday Baking Season. I’m planning ahead NOW for my kids’ teacher gifts. (Speaking of gifts, have you seen our first-ever #HealthyKitchenHacks Gift Guide?!)

How to Make Homemade Whole Wheat Bisquick | @TspCurry

My updated Healthy Whole Wheat Baking Mix has:

  • Whole wheat pastry flour for better baking results (you can still use regular whole wheat flour, see Recipe Notes below)
  • Golden flaxseed – Helps keep baked goods moist. Adds good omega-3 fats.
  • Shredded cold butter – The flavor of butter is the best, but I could lower the amount of butter from the original recipe, thanks to the fat in the added flaxseed. Shredding helps the butter incorporate into the flour. Shredding butter only takes a minute.
  • Coconut oil – Healthier than shortening.
  • A touch of extra soda – Since nutritious flaxseed was added, baked goods may not rise as high. The touch of extra soda helps.

Homemade Whole Wheat Baking Mix

Finally! A healthy baking mix to keep on hand for last-minute baking. Whole wheat flour is a whole grain and flaxseed adds fiber and good omega-3 fats.


Ingredients

Scale
  • 3 cups whole wheat flour (preferably whole wheat pastry flour; see notes)
  • 1/4 cup ground flax seed
  • 2 tablespoons + 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon table salt
  • 1 tablespoon sugar
  • 3 tablespoons cold butter, shredded on large holes of box grater
  • 1/4 cup coconut oil

Instructions

Add flour, flaxseed, baking powder, baking soda, salt and sugar to a large bowl. Whisk to blend.

Using a pastry blender or 2 butter knives together, blend butter and coconut oil into dry ingredients, until coconut oil is the size of large peas.

Store in a large jar or in a plastic zip-top bag in the refrigerator for 2 weeks, or freeze for several months.

Notes

Baking Mix Recipes:

Stir in the following ingredients, just until batter is moistened.

Kefir Pancakes: 1 cup baking mix + 1 cup kefir (or buttermilk) = 8 pancakes (3-in diameter)

Banana Pancakes: 1 cup baking mix + 2 mashed bananas + 1/3 cup milk = 8 pancakes

Cranberry Scones: 1 cup baking mix + 1 (6-oz) container vanilla Greek yogurt + 1/4 cup dried cranberries. Bake at 400-degrees-F for 14-15 minutes. Yield 6 scones.

Almost any other baking mix recipe found online can also be used.

Whole wheat pastry flour is preferred as final baked goods come out a bit fluffier. If using regular whole wheat flour, use 1 tablespoon more liquid in the recipe and expect a bit denser product (which sometimes preferable – as in brownies or bars!)

Store mix in the fridge in a glass jar (or zip-top plastic bag) for up to 2 weeks, or freeze for several months.

This did not work for me! I tried the buttermilk pancakes and the batter is so thin. Also, most pancake recipes call for eggs. I thought that might be the problem, so I added some in. The batter was still too thin. I loved the idea of this. I'm disappointed.

Oh no! I'm so sorry for your troubles Amber! The recipes at the bottom of my recipe are triple tested. Maybe your buttermilk wasn't cold or shook up really well. Buttermilk can be thin and watery if it's not shaken well. Also, make sure your baking mix is well mixed. If the batter is STILL too thin, just add more baking mix, 1 tablespoon at a time until you reach the consistency of batter you prefer.

Great idea to be able to throw recipes together in a pinch. Never would have thought to do this with butter and store a flour mix in the fridge!

Butter is best, right Kelly. Bisquick just doesn't have butter and it makes a HUGE difference in the flavor of baked goods. Pancakes, scones, biscuits made with this mix taste buttery (and not like they are made with a *mix*!)
