Eat more leafy greens this year with these delicious, family-friendly recipes featuring spinach, kale, collards, Swiss chard and more!
It’s a new year and a good majority us (even us dietitians) are vowing to drink more water, do more meal prep, eat more whole grains, plant-based meals, vegetables…..and the list goes on.
Getting more leafy greens is often a challenge for me – especially in the winter months when fresh-from-the-garden delicate greens aren’t as abundant. Not to mention, I quickly get into salad ruts and I’m not a green smoothie kind of gal (this Tropical Cilantro Smoothie from The Kitchn is as close as I’ll get to drinking my greens.)
So, I’ve called upon my talented, food-loving dietitians bloggers to share some of their favorite ways to enjoy greens year round and I gotta say, I’m super inspired by this round-up for myself and my 8 year-old (the husband is pretty much a lost cause at this point.)
My two “go-to” recipes for eating more greens:

Happy New Year! Thanks so much for including the Swiss Chard Coleslaw I shared for the Recipe ReDux last month. I agree with you, I can't do the green smoothies (pb-chocolate or berry, yes!) but do love getting my green fix in eggs most recently. Thank goodness for the Trader Joe's Spinach in a bag, it's a game changer for me to get my greens in! Can't wait to try some of the items on this list- MJs looks especially yummy!

Of course! Definitely want to try out your slaw (and I'll have to remember that one when I get a ton of it in my CSA share come spring/summer.) Another "no thanks to green smoothies" gal - there aren't alot of us out there! I have a bag of TJ's spinach in my fridge right now and probably will try Min's, Danielle's or Amber's recipe next (love my pasta!)
