Lately, celery has been getting a lot of love.
Two of my favorite podcasts have devoted entire episodes to …celery >>> Sporkful and Proof.
This crunchy veggie, usually only relegated to sad relish trays and grandma’s chicken noodle soup, these pale green stalks and feathery leaves are making a comeback, big time.
But whether it’s hot – or not – celery still has to be used up. Here are my favorite ways to use up the whole celery stalk.
Quick Celery Pickles
Don’t toss your leftover pickle juice, especially if that jar of pickles was pricy. But even if the pickle juice was store-brand dills, celery sticks steeped overnight in pickle juice (in the fridge) are delicious the next day. Roasted Celery
To make the sweet flavors of celery come out, roast sticks of celery with any other vegetable (from carrots to cauliflower). Just place about 3 stalks (cut into 2-inch sticks) with 2 carrots, or a few potatoes, or other veggies on a baking sheet. (Don’t crowd the veggies – roast on 2 trays if necessary.) Drizzle with olive oil and sprinkle with salt; toss to coat. Roast at 400-degrees F for about 20 minutes.
Scoop up canned fish
Chopped celery in tuna salad sandwiches is a classic, for good reason. But this delicious combo can be expanded to canned salmon and canned sardines. Just make a salmon salad sandwich spread – but forget the bread and the spoon, if you’d like. Scoop these healthy dips with celery. Or lay a sardine on a celery stick for a messy, but delicious lunch!
Pair celery with olives
Salty olives and crisp, sorta-sweet celery are a yummy combo. Just toss celery and olives together for a super quick salad. Or add a small bowl of this salad to a cheese plate.
Serve with oranges

In celery cocktails!
Yes, you can eat the celery in your Bloody Mary. But I’m much more partial to the cocktail above. The herbal celery totally compliments the botanicals in the gin – tonic water brings them together – and orange makes the cocktail sing. (:

Orange and celery is such a winning combo! Love it. Although I think I have a mild reaction to Orange.
Would you recommend any other less citrusy fruits?

You always have such creative ideas like this. I love the pickled celery one! I'm a huge fan of pickles and usually have leftover celery that I don't know what to do with.

the yellow parts of the celery stalks are great with the leaves for using in stock. Just throw into a plastic bag and freeze until ready to make the stock.
