A unique Thanksgiving appetizer: Savory yogurt parfaits layered with cheesy pumpkin and siggi’s Pumpkin & Spice skyr.

One of the perks of having siggi’s dairy as this year’s Blog Brûlée presenting sponsor (besides hanging out with Siggi himself) was all the yogurt delights we got to sample including this Smoked Salmon & Dill layered with siggi’s yogurt parfait style. All that was missing was the bagel (and even this carb lover didn’t miss it – the snack was THAT good.)
When Siggi Hilmarsson moved from Iceland to the U.S., he found that the yogurts here were too sweet and artificial tasting. So he started making skyr (pronounced skeer), the traditional Icelandic strained yogurt, in his NYC kitchen in 2014. And the rest is history as now his yogurts are available nationwide.

While cleaning out my Nana’s kitchen, my mom has given me hundreds and hundreds of recipe clippings Nana had saved over decades (she would have LOVED Pinterest!) I recently came across one for Sweet Potato Parfaits which reminded me of the classic Thanksgiving sweet potato baked dish.
It was easy to make a savory recipe with siggi’s flavored yogurt (Pumpkin & Spice in this case) because they are so low in sugar. Bonus.
Admittedly, these cheesy pumpkin parfaits are a bit outside of the traditional Thanksgiving menu box but I feel like appetizers are where you can get a little more creative and unique on turkey day.
Think cheesy pumpkin gratin meeting a dollop of cool creamy goodness and you got these parfaits.

- Yield: 8 appetizer servings. 1x
Description
A savory twist on dessert parfaits – heat cheese with pumpkin puree and layer with siggi’s Pumpkin & Spice skyr for a creative Thanksgiving appetizer.
Ingredients
- 1 (15 ounce) can canned pumpkin (not pumpkin pie puree)
- 1 tablespoon unsalted butter
- 2 tablespoons heavy cream or whole milk
- 4 ounces sharp Cheddar cheese, shredded and divided
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 (5.3 ounce) containers siggi’s Pumpkin & Spice yogurt
- Roasted pumpkin seeds, optional
Instructions
- In a saucepan, add pumpkin, butter and cream or milk. Heat over medium heat and stir. Heat until warm.
- Add in 3 ounces cheese and mix until melted. Mix in salt and pepper and remove from heat. Cool slightly.
- Using eight (4-5 ounces) glasses, make parfaits by layering one tablespoon pumpkin puree, one tablespoon siggi’s yogurt, one tablespoon puree, one tablespoon yogurt and ending with one final tablespoon of puree. Repeat with remaining glasses. Top each parfait with remaining cheese and a few roasted pumpkin seeds, if desired.

ahh I was SO hoping to find the pumpkin one at my Whole Foods, but they didn't carry that flavor. Thankfully the vanilla and coconut ones were just as yummy! But I love how you made this a savory recipe with the cheese! So unique from the typical sweet parfaits I see!

I'm so intrigued by this savory parfait! The addition of cheddar sounds so yummy! I still haven't been able to find the pumpkin & spice siggi's, but I'll keep looking, everybody seems to love it!

I love the idea of a savory parfait with a hint of sweetness ;). I really look forward to all kinds of stuffings come Thanksgiving. It's so comforting and satisfying to me..feel like my body really craves carblicious things during this time of the year..sweet potatoes, pumpkin...I shall enjoy them to the fullest!
