Do you remember the first food photo you pinned? (I know, it was ages ago, way back in like 2012.)
I do. It was this gorgeous-looking Breakfast Pizza via Pigamitha that got me to sign up to Pinterest so I could REMEMBER to try out the simple concept of soft-cooking eggs on a pizza.
Now it’s three years later and dozens of pinned recipes have made it to my dinner table, but not this one. Yet I always kept it as the cover of my “Recipes to Make NOW” board because I knew its day would come.
That day is now.
And that’s because soft-cooked, runny eggs are great to make with Davidson’s Safest Choice Eggs – which is the sponsor for this month’s Recipe ReDux Light & Lean Recipe Contest. Davidson’s eggs are pasteurized in an all-natural warm water bath so they are safe to use for any no-cook or under-cooked egg dishes. And the good news is that pasteurization doesn’t change the nutrition or flavor.
For this recipe, I created a dinner pizza and adapted Pigamitha’s brilliant idea for soft-cooked eggs on pizza. She suggests to crack the eggs into ramekins before topping the pizza to keep yolks from breaking and to remove some of the egg whites – so they don’t run all over the pizza.

Oh, and have you heard the news? An egg a day is OK. Even for those with high-blood-cholesterol, it’s OK. Nutrition researchers have found eggs that eggs are part of a heart-healthy diet when the overall diet is lower in saturated fat.

- Yield: 4-6 slices 1x
Description
Fresh green onions, savory Cheddar cheese, sweet mini-peppers and soft-cooked eggs top this quick dinner pizza.
Ingredients
- Whole wheat pizza dough – purchased or my 5-Minute, 5-Ingredient Pizza Dough
- Cornmeal for dusting (optional)
- 1 garlic clove halved
- Fresh ground black pepper
- 4–5 sweet mini-peppers, sliced thinnly
- 4 green onions, sliced in 2 inch pieces
- 1 1/2 teaspoons olive oil
- 4 eggs
- 2 ounces Cheddar cheese, crumbled (I used Cabot Sharp Cheddar)
Instructions
- Place pizza stone or large sheet pan in oven and preheat to 450-degrees F.
- Remove pizza stone from oven dust with cornmeal if desired. CAREFULLY spread dough over hot pizza stone. Rub cut garlic over dough (to give dough garlic flavor.) Sprinkle with black pepper.
- In a large bowl, add mini-peppers, green onions and olive oil; toss to coat. Scatter peppers and onions over pizza dough. Bake for 10 minutes until edges of crust begin to brown.
- Meanwhile, crack each egg into an individual ramekin. Pour out some of the white so about 1 tablespoon of white remains in the ramekin with the yolk. (Use extra egg whites for another use.) Gently slide each yolk and remaining 1 tablespoon of white onto the pizza crust. Sprinkle with cheese.
- Bake for 5 minutes until eggs are set – but still be runny when sliced open. (They will still appear bright yellow, but mine were set at exactly 5 minutes.)

Come to think of it, I've never had a runny egg on pizza before! I've had the breakfast pizza with scrambled mixed in, but because I was never a fan of the soft cook egg until a couple of years ago, it wasn't on my agenda! But NOW I am totally into this :) This pizza would be fabulous all day long!
