Surprise your chocolate loving Valentine with this calzone stuffed with raspberries and chocolate pudding!
2017 update: I created this recipe back in 2012 and it still one of my favorite recipes I make for Valentine’s Day. Sadly, Teresa’s has taken it off their menu but at least I can make it at home now and so can you!
For many years, my favorite Italian BYO was Teresa’s Cafe – walking distance from my home back in the day.
Always, without fail, I”d order their unique and delectable dessert called focciocalto. Basically, it’s a pizza, spread with nutella & raspberry jam, folded over calzone style, baked in a wood burning oven and topped with powdered sugar, raspberry sauce, chocolate syrup and whipped cream before arriving table side. Chocolate + Hazelnut + Pizza = Dessert Heaven.
Alas, now I live a few towns over, just far enough away to not be dining at Teresa’s regularly vs. perhaps the once a year visit. I’ve always wanted to reinvent their dessert. I opted to make a homemade chocolate pudding with raspberries for the filling (as the dietitian in me.)
Don’t be intimidated by the sound of this – store bought pizza dough makes it a snap to make.

I serve it with a dusting of powdered sugar, a drizzle of chocolate syrup and more fresh raspberries, which is still delish but cuts out a lot of the extra calories the original dessert’s toppings bring. And bonus, you can use frozen raspberries if you prefer!

Description
Surprise your chocolate loving Valentine with this calzone stuffed with raspberries and chocolate pudding!
Ingredients
- 2 pounds refrigerated or frozen pizza dough
- 1 cup fresh raspberries
- 3 tablespoons cornstarch
- 3 tablespoons sugar
- 2 tablespoons cocoa powder
- 1 cup low fat milk
- 1 cup low fat chocolate milk
- 1/4 teaspoon almond extract
- Powdered sugar
- Chocolate syrup
- Fresh raspberries
Instructions
- Sit thawed pizza dough at room temperature for 1 hour.
- Divide raspberries into four ramekins. Set aside.
- In a medium saucepan, whisk together cornstarch, sugar and cocoa powder. Whisk in milk and chocolate milk and turn on stove to medium heat.
- Whisk constantly until mixture starts to boil and thickens. Whisk constantly for an additional 2 minutes. Remove from stove and whisk in almond extract. Pour into ramekins and cool slightly in refrigerator for 1/2 hour.
- Preheat oven to 450 degrees F.
- Divide dough into eight pieces. Roll each into a 6-inch circle.
- Spoon half of pudding from ramekin onto half of the dough circle. Fold over and seal dough with fork. Repeat with remaining dough circles.
- Place calzones onto two baking sheets coating with cooking spray. Bake for 10 -12 minutes, until just golden brown. Cool on rack for 15 minutes.
- Before serving, dust with powdered sugar. Garnish with drizzle of chocolate syrup and more raspberries if desired.

Oh wow - I don't think I've ever seen anything like this focciocalto from Teresa's Cafe! I am beside myself - totally loosing my cool over this "pizza, spread with nutella & raspberry jam and baked calzone style and then topped with powdered sugar, raspberry sauce, chocolate syrup! Oh heavens! Wow!
