Chocolate Raspberry Calzones

Description

Surprise your chocolate loving Valentine with this calzone stuffed with raspberries and chocolate pudding!


Ingredients

  • 2 pounds refrigerated or frozen pizza dough
  • 1 cup fresh raspberries
  • 3 tablespoons cornstarch
  • 3 tablespoons sugar
  • 2 tablespoons cocoa powder
  • 1 cup low fat milk
  • 1 cup low fat chocolate milk
  • 1/4 teaspoon almond extract
  • Powdered sugar
  • Chocolate syrup
  • Fresh raspberries

Instructions

  1. Sit thawed pizza dough at room temperature for 1 hour.
  2. Divide raspberries into four ramekins. Set aside.
  3. In a medium saucepan, whisk together cornstarch, sugar and cocoa powder. Whisk in milk and chocolate milk and turn on stove to medium heat.
  4. Whisk constantly until mixture starts to boil and thickens. Whisk constantly for an additional 2 minutes. Remove from stove and whisk in almond extract. Pour into ramekins and cool slightly in refrigerator for 1/2 hour.
  5. Preheat oven to 450 degrees F.
  6. Divide dough into eight pieces. Roll each into a 6-inch circle.
  7. Spoon half of pudding from ramekin onto half of the dough circle. Fold over and seal dough with fork. Repeat with remaining dough circles.
  8. Place calzones onto two baking sheets coating with cooking spray. Bake for 10 -12 minutes, until just golden brown. Cool on rack for 15 minutes.
  9. Before serving, dust with powdered sugar. Garnish with drizzle of chocolate syrup and more raspberries if desired.
