- 2 cups nonfat plain Greek yogurt
- 2 tablespoons peanut butter
- 1 tablespoon honey
- 1/2 teaspoon cinnamon
- 2 small bananas, sliced
- 2 tablespoons wheat germ
- Roasted peanuts for garnish, optional
Instructions
- In a bowl, beat together yogurt, peanut butter, honey and cinnamon. Blend for about 30 seconds or until it looks ‘whipped.’
- To assemble parfaits, use two wine glasses, sundae glasses or any tall glass. In one glass, layer 1/6th of the yogurt mix, top with a few banana slices then sprinkle 1 teaspoon of wheat germ over top. Repeat twice and garnish with peanuts if you want. Repeat process to make second parfait.
