Baked Oatmeal Squares with Cherries

Description

Take oatmeal to the next level with these baked oatmeal squares with dried cherries. Delicious for breakfast or a snack – kids will love them, too!


Ingredients

  • 3 cups old fashioned oats
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 tesapoon nutmeg
  • 1/2 cup plain nonfat yogurt
  • 2/3 cup milk
  • 1/2 cup applesauce
  • 1/4 cup canola oil
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract or 1/4 teaspoon almond extract
  • 2/33/4 cup dried cherries

Instructions

  1. Preheat oven to 350 degrees. Prepare a 8×8 baking pan with cooking spray.
  2. In a large bowl, mix together oats, baking powder, salt, cinnamon and nutmeg.
  3. In another bowl, whisk together yogurt, milk, applesauce, oil, brown sugar, eggs and extract. Add wet ingredients to dry ingredients, mix until just incorporated. Fold in dried cherries.
  4. Pour batter into baking pan and spread evenly in pan.
  5. Cook for 35 minutes or until golden brown on top. Cool in pan for 30 minutes before cutting into squares.
