Description
Just throw fish and veggies on a sheet pan and drizzle with melted butter and soy sauce. That’s it! Dinner is done in 10 minutes: Butter and Soy Sauce Sheet Pan Fish Dinner
Ingredients
- 2 tablespoons salted butter
- 1 tablespoon low-sodium soy sauce
- 4 (3-oz) pieces fish such as cod or tilapia (fold under long skinny pieces so they cook evenly)
- 12 ounces of green beans
- 12 ounces of cherry or grape tomatoes
Instructions
Coat 2 large sheet pans with non-stick cooking spray. Heat oven to 400-degrees-F.
Melt butter in the microwave or on the stovetop. Whisk soy sauce into butter.
Place 2 pieces of fish on one sheet pan, and 2 pieces fish on the other sheet pan.
Place beans and tomatoes in a large bowl. Add butter mixture to bowl and toss gently to coat. Pour half of green bean mixture over fish on 1 sheet pan, and half of mixture over the fish on the other sheet pan. Turn the fish over and rub it in the butter mixture to coat. Spread veggies out evenly on baking sheets so air can circulate around them. Bake for 10-12 minutes until fish is just opaque. Do not overbake fish.
Notes
Use 2 sheet pans in this recipe. Without 2 sheet pans, the veggies will be crowded and will not get a soft and golden brown as the hot oven air will not be able to circulate between them.
