Description
Enjoy more seafood in your diet with this easy to make dinner recipe: pepper, tomato, shrimp pasta bake.

- 1 cup chopped tomatoes
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (12 ounce) jar roasted bell peppers, drained and coarsely chopped
- 3/4 pound medium size shrimp, peeled and deveined
- 1/2 pound cooked gnocchi or other whole wheat pasta (small shapes) – kept warm
- 1/3 cup fresh basil leaves, torn
- 4 ounces ricotta salada or feta cheese, cubed
Instructions
- Preheat oven to 425 degrees Fahrenheit.
- Mix tomatoes, olive oil, garlic, salt and pepper in a large baking pan. Cook for 15 – 20 minutes, until tomatoes have softened, stirring a few times.
- Stir in roasted peppers and shrimp and bake for about 15 minutes until the shrimp are cooked through.
- Remove from oven and gently stir in warm gnocchi, basil and cheese.
- Serve immediately
