Roasted Pepper + Tomato Shrimp Gnocchi Bake

Description

Enjoy more seafood in your diet with this easy to make dinner recipe: pepper, tomato, shrimp pasta bake.


Ingredients

Scale
  • 1 cup chopped tomatoes
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (12 ounce) jar roasted bell peppers, drained and coarsely chopped
  • 3/4 pound medium size shrimp, peeled and deveined
  • 1/2 pound cooked gnocchi or other whole wheat pasta (small shapes) – kept warm
  • 1/3 cup fresh basil leaves, torn
  • 4 ounces ricotta salada or feta cheese, cubed

Instructions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Mix tomatoes, olive oil, garlic, salt and pepper in a large baking pan. Cook for 15 – 20 minutes, until tomatoes have softened, stirring a few times.
  3. Stir in roasted peppers and shrimp and bake for about 15 minutes until the shrimp are cooked through.
  4. Remove from oven and gently stir in warm gnocchi, basil and cheese.
  5. Serve immediately
