Quinoa Dark Chocolate Bark

You only need 3 ingredients and 20 minutes to make this yummy, better-for-you, quinoa dark chocolate bark – a sweet holiday gift!


Ingredients

  • 1/2 cup uncooked tri-colored quinoa
  • 1/2 teaspoon sea salt
  • 8 ounces dark chocolate

Instructions

  1. In a saucepan coated with cooking spray, toast quinoa over medium heat for 2-3 minutes, stirring frequently. Remove from stove and mix in salt.
  2. Add chocolate to a sealable plastic bag and pound on it with a ladle or meat pounder until broken into small pieces. Pour into a microwave-safe bowl. Heat chocolate for 45-60 seconds in microwave and stir. Heat for 30 seconds and stir well. Repeat until all chocolate is melted.
  3. Mix most of the quinoa mixture into the melted chocolate (save about 3 tablespoons to sprinkle on top.)
  4. Line a 13×9-inch baking sheet with a lip with parchment paper. Pour in quinoa chocolate mixture and spread evenly until the entire pan is covered. Sprinkle remaining quinoa on top.
  5. Freeze for 10-15 minutes or until set.
  6. Remove from freezer and break into approximately 2-inch to 3-inch jagged pieces. Store in a sealed container/freezer bag in refrigerator or cool place.
