Piled High Pizza Sub

Description

Pizza ingredients piled high on crusty bread. A secret ingredient keep bread moist when served cold – or warm in the oven to make the cheese all melty!


Ingredients

  • 3 red bell peppers
  • 1 tablespoon olive or canola oil
  • 8 ounce package white button mushrooms, halved or quartered
  • 1 tablespoon crushed dry oregano
  • 1 container (10 oz) Sabra Classic Hummus (or Roasted Garlic flavor)
  • 1 long loaf Italian (or French) bread, split horizontally
  • 1/2 pound thinly sliced deli turkey pastrami
  • 1 1/2 cups (6 ounces) shredded mozzarella cheese
  • Handful of fresh basil leaves

Instructions

  1. Heat oven to 450-degrees F. Place parchment paper on 2 baking sheets (Use this tip for How to Keep Parchment Paper from Rolling Up)
  2. Slice peppers in half and remove seeds; place cut side down on 1 baking sheet. Toss mushrooms with oil; place on 2nd baking sheet. Place both pans in convection oven and roast 20-25 minutes (longer with regular oven) until dark spots appear on peppers. Remove trays from oven, cool slightly and place peppers in glass bowl and cover tightly with plastic wrap to steam for 10 minutes. When cool, peel off pepper skins.
  3. Combine oregano and hummus.
  4. To assemble sandwich, spread hummus oregano mixture on both sides of cut bread. Top the bottom half with turkey, roasted red peppers, cheese, mushrooms and basil. Place top half on bottom and press down gently so mushrooms press into soft bread (to keep them from rolling out of sandwich. Serve cold or wrap in aluminum foil and warm 10 minutes in 350-degree oven.
