Refreshing peach sorbet in prosecco for a cooling cocktail
Ingredients
Scale
- 3/4 cup sugar
- 2/3 cup water
- 4 cups pitted peaches – about 5 peaches (I peeled all but 1 peach – the one skin added flavor and color)
- 3 tablespoons Nassau Royale Liqueur
- 2 tablespoons fresh lime juice
- 2 2/3 cups presecco, sparkling white wine or setzer water, chilled
Instructions
- Combing sugar and water in a glass measuring cup. Microwave on high 2 minutes. Cool completely. Place sugar syrup, peaches, liqueur, and lime juice in a blender; process 1 minute or until smooth.
- Pour mixture into freezer can of ice cream freezer; freeze according to manufacturer’s instructions. Spoon sorbet into a freezer-safe container; cover and freeze for 4 hours or until firm.
- Divide prosecco among 4-6 cocktail glasses and top with a 1/3 cup scoop of sorbet. Garnish with peach slices and a lime wedge.
