- 2 medium ripe bananas
- ½ cup Vita Coco unflavored coconut water
- ¼ cup cocoa powder
- 2 teaspoons maple syrup
- 2 teaspoons toasted unsweetened coconut flakes, divided
- In a blender, mix bananas, coconut water, cocoa powder and maple syrup until smooth. Pour into two ramekins or small bowls. Top each pudding with 1 teaspoon of toasted coconut.
- Note: Refrigerate overnight if you want a thicker pudding.
