- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 1 large sweet potato, cubed (peeled if you like)
- 4 chicken thighs
- 1 1/2 teaspoon dried oregano
- 1/2 cup green olives, chopped + 1/2 cup olive ‘juice’
- 3/4 cup California Dried Plums, halved
- 1/4 teaspoon crushed red pepper
- 1 bay leaf
- Kosher salt and black pepper to taste
- 2 tablespoons balsamic vinegar
- Cilantro for garnish (optional)
Instructions
- In slow cooker combine onion, bell pepper, sweet potato, chicken, oregano, olives, olive juice, dried plums, crushed red pepper, bay leaf and salt/black pepper to taste. Sprinkle with vinegar and 1 1/2 cups water or chicken broth. Set the slow cooker on HIGH for 4-5 hours or LOW for 7-8 hours.
- Chicken is done when thigh pieces, pricked with a fork at their thickest, yield clear yellow (rather than pink) juice. Garnish with cilantro if desired.
Notes
Flavorful, moist set-it-forget-it chicken with sweet potatoes, olives, dried plums and oregano.
