Cinnamon Almond Chia Seed Muffins -

Sweet, moist muffins with superfood chia seeds: Cinnamon Almond Chia Muffins. Cinnamon adds warm spice and health benefits too.




  1. Line 12 muffin cups with cupcake/muffin paper liners.
  2. In a medium bowl, combine flours, sugar, cinnamon, baking powder, salt. Make a well in center of dry ingredients.
  3. In another bowl, whisk together egg, milk, oil, vanilla, almond extract. Pour wet ingredients into dry ingredients and mix just until moistened. Gently fold in almonds.
  4. Divide among 12 muffin cups.
  5. Bake in a preheated 400 degree (F) oven 16-18 minutes or until toothpick inserted comes out clean.
