Description
Sweet, moist muffins with superfood chia seeds: Cinnamon Almond Chia Muffins. Cinnamon adds warm spice and health benefits too.

- 2 tablespoons chia seeds ground into 3 1/2 tablespoons chia seed ‘flour’
- 1 cup all purpose flour
- 1/2 cup oats, ground into flour
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 beaten egg
- 3/4 cup milk
- 1/4 cup canola oil
- 1/2 teaspoon vanilla
- 3/4 teaspoon almond extract
- 1/4 cup chopped or sliced almonds.
Instructions
- Line 12 muffin cups with cupcake/muffin paper liners.
- In a medium bowl, combine flours, sugar, cinnamon, baking powder, salt. Make a well in center of dry ingredients.
- In another bowl, whisk together egg, milk, oil, vanilla, almond extract. Pour wet ingredients into dry ingredients and mix just until moistened. Gently fold in almonds.
- Divide among 12 muffin cups.
- Bake in a preheated 400 degree (F) oven 16-18 minutes or until toothpick inserted comes out clean.
