Description
This healthy update on the comfort food classic Shepherd’s Pie can be thrown together in 20 minutes flat – but you’d never guess by the rich flavors and creamy sauce.

- 2 tablespoon unsalted butter
- 1 small onion, finely chopped
- 3/4 cup mashed sweet potatoes, warmed with 1/2 teaspoon butter
- 3/4 cup mashed potatoes warmed with 1/2 teaspoon butter
- 1 tablespoon whole wheat flour
- ¼ teaspoon ground black pepper
- 1/2 cup wine or chicken broth
- 1 (12.5 ounce) can chicken, drained, rinsed and shredded
- 1 1/2 teaspoon finely chopped fresh sage
- 1 cup frozen or canned (drained) corn
- 1 cup frozen or canned (drained) peas
Instructions
- Set aside 4 ramekins.
- Melt butter in medium saucepan. Add onions and cook, stirring, until tender, about 5 minutes. While onions are cooking, mix together sweet potatoes an potatoes and keep warm.
- Stir in flour and pepper, cook 1 minute. Slowly whisk in wine/broth and simmer until thick, about 1 minute.
- Stir in chicken, sage, corn, peas and yogurt; stir a few times until warm. Divide mixture into ramekins. Top with warm buttery potato mix.
