Cherry Clafouti with Lime

Description

A classic French dessert made super simple – and healthier with less sugar and a modern twist of lime.


Ingredients

Scale
  • 1/2 cup dry oatmeal
  • 1 1/4 cup whole or 2% milk
  • 1/4 cup + 1 tablespoon sugar – divided
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • Grated zest from 1/2 lime (about 1 teaspoon zest very loosely packed)
  • 2 1/2 cups (about 12 ounces) pitted black cherries (fresh or frozen)

Instructions

  1. Butter or spray with cooking spray a 9.5-inch glass (or ceramic) pie plate; set aside.
  2. In a blender, process oats until finely ground like flour. Add remaining ingredients, except 1 tablespoon sugar and cherries; process until very smooth.
  3. Pour only 1/4-inch of batter into pie plate. Place over a medium-hot stove burner and cook the batter until beginning to get firm – about 3-4 minutes. Sprinkle cherries over batter; sprinkle remaining 1 tablespoon sugar over cherries. Top with remaining batter.
  4. Bake in a 350-degree oven for about 50-55 minutes until batter is set and a knife inserted into batter comes out nearly clean.
  5. Serve warm or room temperature sprinkled with powdered sugar.
