Gluten-free lemon coconut scones for spring celebrations – made with coconut and oat flours.
Lemon and coconut lovers – this one is for you. I made these Gluten Free Lemon Coconut Scones (featured over at Healthy Aperture this month) because a) I haven’t made scones in forever, b) I wanted to try to bake with coconut flour, c) I love coconut and lemon together, and d) do I need any more reasons?
These scones are great for any upcoming celebrations (Mother’s Day perhaps…) or even if you are simply celebrating the fact that you have a few quiet moments to yourself with your cup of coffee or tea (we can dream, can’t we?)
