UPDATE to my mishaps on today’s live demo:
1) Follow the recipe instructions and cook the fritters 8 – 10 minutes TOTAL, flipping halfway through vs. 8 – 10 per side like I did here.
2) Don’t forget to add half of the sauteed scallions/garlic mix to your red pepper sauce before blending (oops I forgot!)
3) ROMESCO is the name of the Spanish red pepper sauce similar to this one (the word that I could NOT remember.) And here’s another version of it:

Olive Oil Berry Breakfast Cake instructions: Rinse the quinoa in a fine-mesh strainer, swirling with your fingers to wash away the bittertasting seed coating. Put the quinoa in a medium saucepan and cover with 1⅓ cups water. Cover the pan and bring to a boil over high heat. Lower the heat to medium and cook for 15 minutes. Turn off the heat and let the quinoa steam, still covered, for 5 more minutes, until tender. Spread the quinoa on a plate to cool for 15 to 20 minutes. Put half of the quinoa in a food processor or blender and add the milk. Blend until smooth, then scrape down the sides. Add the remaining quinoa and 2 eggs and process until very smooth, about 1 minute. Add the remaining 2 eggs, honey, oil, baking powder, cinnamon, vanilla, baking soda, and salt. Process until smooth, about 1 minute. Pour the batter into the prepared baking dish and sprinkle evenly with the blueberries. Bake for 40 to 45 minutes, until an inserted toothpick comes out nearly clean.
Olive Oil Berry Breakfast Cake ingredients: ⅔ cup quinoa ⅓ cup 2% milk 4 large eggs ½ cup honey ⅓ cup extra-virgin olive oil 2 teaspoons baking powder 1¼ teaspoons ground cinnamon 1 teaspoon vanilla extract ½ teaspoon baking soda ¼ teaspoon kosher or sea salt 1 cup fresh or frozen blueberries
