The kids and I were sitting around the table enjoying this Sriracha Chicken & Pineapple Pizza when I reminisced that eating pizza makes me think of high school.

Kids: “What was it like waaaay back when you were in high school?”

Me: “Well, besides eating lots of pizza….I drove a gold car to school and to cruise Main Street.”

My girls: “You mean gold like a Cinderella carriage?” 

Me: “No. Gold as in a 1973 Goldenrod-colored Subaru. I was thankful to have a car, but it was older than me. It backfired loud like this: BAAANG!  And when it did, all my friends in the car ducked. So then I looked like I was cruising around by myself. And that was embarrassing.”

Kids: “Why?”

Me: “Someday, you’ll understand.”

This month’s Recipe ReDux theme is about the recent food trend of “smoke and spiciness.” A Sriracha pizza sounded yummy. So I googled it find out if anyone else had thought of this combo.

As testament to the food trend fact that Sriracha is becoming almost as mainstream as ketchup, even Pizza Hut planning on a Sriracha pizza. However, thoughts of Pizza Hut brought up more bad high school memories: I was a Pizza Hut waitress and NO high school student relished the opportunity to wear a brown polyester uniform with matching visor that flattened her big hair.

So I went with my own creation, which isn’t too spicy – and it turned out to be the best pizza you’ve ever made, Mom!”

Sriracha is sweet, hot and garlicy. So, in case you’re new to the ‘new’ American ketchup, try it with:

Sriracha Chicken & Pineapple Pizza

Description

Sweet, spicy and garlicky heat makes this chicken and roasted pineapple pizza crazy good.


Ingredients

Scale
  • Your favorite homemade or purchased pizza dough
  • 1 teaspoon Sriracha sauce
  • 1 tablespoon ketchup
  • 1 tablespoon honey
  • 1 tablespoon corn or canola oil
  • 1 large red bell pepper, cored and sliced in strips
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh ginger
  • 1 pound skinless, boneless chicken breast, cut into 1/2-inch-thick slices
  • 1 1/2 cup fresh sliced pineapple (or canned pineapple rings cut into 1/4ths)
  • 1/2 cup shredded sharp Cheddar cheese (I used Cabot Vermont Sharp Cheddar) or mozzarella cheese

Instructions

  1. Heat oven to 400-degrees. In a small bowl, combine Sriracha, ketchup and honey in a small bowl; set aside.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add red pepper; sauté 3 minutes or until tender. Add garlic, ginger and chicken; sauté 6 minutes or until chicken is done. Stir in Sriracha mixture; cook 1 minute, tossing to coat.
  3. Remove chicken and peppers to plate, reserving pan juices in pan. Add pineapple to pan and cook 2 minutes, tossing to coat. Remove pineapple from heat.
  4. Roll out pizza dough and place on baking sheet or heated pizza stone.
  5. Assemble pizza by sprinkling 1/4 cup cheese on unbaked flattened pizza dough. Top with chicken pepper mixture and with pineapple. Sprinkle with remaining 1/2 cup cheese. Bake 20-25 minutes until edges are golden.

So, here’s to memories made and shared around the family dinner table. And maybe someday my kids will be sharing memories with their kids about a time loooong ago – when little packets of Sriracha didn’t automatically come with every fast food burger or slice of pizza. (My prediction!)

Thanks for the recipe! Pizza hut was the "place to go" when I was growing up - I didn't work there, so my memories are mostly of the big red plastic cups...I loved those things!

Did I miss something? I d not see pineapple in the ingredient list…and how much is used (cubed…natural or canned) Thanks for any enlightenment !!! This looks really amazing!

This is my kind of pizza! This sounds just fabulous. Love the little bit of sweet, little bit spicy flavor combination here. YUM!
