Garlic Scapes

They’re back!! A few years ago, this garlic fiend fell in love with garlic scapes (seriously, how did I live 40 years without them?) Called garlic scapes, green garlic or garlic shoots, they have a short season but are worth seeking out as they are milder than garlic and taste oh so very fresh.

Traditional Green Goddess Dressing features garlic, parsley, chives, tarragon, has a mayonnaise base and uses anchovies for extra flavor. I used yogurt and avocado (it’s green after all) for the creamy base and only left out the little fishies because my pantry was bare.

Garlic Scape Green Goddess Dressing

Description

Garlic scapes are milder version of whole garlic cloves and have a short season in late spring/early summer. Try this version of Green Goddess Dressing!


Ingredients

Scale
  • 3/4 cup Greek nonfat yogurt
  • 1 cup loosely packed flat-leaf parsley
  • 2 garlic scapes, roughly chopped (or 1 garlic clove, peeled)
  • 1/2 avocado, pit and skin removed
  • 1 teaspoon orange muscat vinegar
  • Juice from 1/2 of a lime
  • Water (to thin dressing)
  • Salt & pepper, to taste

Instructions

  1. In a food processor, add yogurt, parsley, garlic scapes, avocado, vinegar and lime juice. Process until smooth.
  2. For a thinner dressing, add water, 1 tablespoon at a time, and process until at a desired consistency.
  3. Add salt and pepper to taste.

I love working with garlic scapes too! and this dressing is perfect. I had never even heard of scapes until a few years ago, so I agree - how did I go so long without them??!

I still haven't discovered garlic scapes here, but I will keep looking, because this dressing winds yummy, and I am a huge garlic fan. Here's a little interesting FYI...I've tried garlic pillion several occasions when I've been sick, since they are supposed to help with immunity, and everytime I've taken them, I've gotten a migraine. BUT, I cook with garlic all the time and never have had any problems. Now, it could be something used as a filler in the pill, but I took different brands each time,so it's pretty curious to me..That sandwich is definitely a must make too!!

So it is called garlic scape ! Been meaning to google it as I've seen it in our local market lately :D Love that scrumptiously refreshing and healthy salad !

I didn't have a clue a few years ago :) Definitely pick some up - they are milder but so delicious and in a few weeks, they'll be gone!
