Surely I can handle pins by Betty. Even if I can’t recreate pins from Martha. But obviously, these little misshapen men are a far cry from either Betty or Martha’s pins.

Here’s what happened.

I asked my kids what I should make for this month’s Recipe ReDux theme of ‘Healthy Holiday Desserts,’ and they (surprisingly!) said meringue mushrooms. They were remembering the time a few years ago when I “made a cake of wood.” It was the traditional French Christmas cake, Buche de Noel, which is shaped like a wooden log. The kids’ favorite part of the cake were the chocolate frosting stuffed meringue mushrooms. (Last year I also made the easy little mushrooms for a Gnome Birthday Cake.) But for this holiday post, I wanted to branch out from mushrooms. I turned to Pinterest for inspiration.

Thus the failed melting, misshapen meringue snowmen above.

We brainstormed about other meringue shapes: Snowballs (tricky,) Christmas trees (already been done, really well,) and ultimately…snow angels.

Now the best part: Snow angels are way, way easier than meringue snowmen.

Simple Meringue Snow Angels

Description

Way easier to make than meringue snowmen. Light, fluffy and perfect for topping a fancy dessert or making a child smile. Not a #pinterestfail


Ingredients

Scale
  • 3 egg whites
  • Pinch of salt
  • 1/4 teaspoon cream of tarter
  • 1 teaspoon vanilla (clear in color if possible; if not clear use 1/2 teaspoon)
  • 1/2 cup powdered (confectioners) sugar
  • Optional garnishes: Colored sugar

Instructions

  1. Set the egg whites in a large bowl on the counter and let warm to room temperature for 30 minutes.
  2. To the egg whites, add salt, cream of tarter and vanilla. Using an electric mixer (or stand mixer) whip for about 1 minute until eggs form soft peaks. Sprinkle in powdered sugar and beat on the lowest speed until sugar is incorporated, then beat on high speed about 2-3 minutes until egg whites are stiff and glossy.
  3. Spoon meringue into a 1-gallon zip-top plastic bag. Snip off the corner of the bag to make a piping bag; start with a 1/3-inch diameter hole. I did make the whole a bit bigger to about 1/2-inch diameter. (But you may find 1/3-inch is good.)
  4. On a parchment-lined baking sheet, pipe the head, large triangle for the dress, and 2 small triangles on either side of the dress for wings. Trim ‘wings’ to desired shape with a butter knife. Smooth ‘dress’ with flat edged spatula, or butter knife.
  5. Sprinkle with colored sugar if desired.
  6. Bake in a heated 200-degree oven for about 45 minutes or until outside is set. Turn off oven and leave in oven for a couple hours or overnight.

And just in case you still want to try mushrooms, they’re really easy too! I used this technique to shape them.
