Last month, on a rainy and cool Sunday, I had the luxury of having brunch with my mom at Parc Brassiere in downtown Philadelphia. We were seated at the window and I got to leisurely sip cafe au lait while dining on a mushroom tart, niçoise salad and of course, pomme frites.

With the food and ambience, it was a scene straight out of Paris (ahhhhh.)

Then this caught my eye on the dessert menu.

Beer Floats? Mai oui!

As my Mama isn’t much of a mid-day drinker, we ended up splitting a lovely Pot de Crème instead but I knew I’d be making my own version of a fruity beer float soon.

And that day has come. (That was my long segue into today’s theme: All Things Easter link up & giveaway.)

My contribution is an Easter Cocktail (along with an idea for an Adult Easter Basket.)

Do you still wish the Easter Bunny would leave you some treats (or maybe he does?)

In my dream world, I’d get some Prosecco in my basket along with Belgium style beers like Chimay and fruit lambics. Then I’d whip up some Raspberry Beer Floats for the grown-ups to enjoy while the kids hunt eggs.

If you aren’t familiar with lambics, they are a Belgium style beer made by spontaneous fermentation where wild yeast falls naturally into vats (vs. specified yeast strains added directly to the vats.) Generally, these beers are aged 1 -3 years and are often flavored with fruit. Popular flavors include Framboise (raspberry), Kriek (cherry) Cassis (black currant), Peche (peach) and Pomme (apple.) And while they are delicious on their own, now that I’ve made a fruit beer float, there’s no turning back.

Raspberry Beer Float

Description

An adult version of a root beer float using lambic fruit beer! Raspberry Beer Float makes for an unforgettable grown-up dessert or drink.


Ingredients

Scale
  • 1/3 cup raspberry sorbet
  • 1/3 cup Greek vanilla frozen yogurt
  • 10 fresh or frozen raspberries
  • 10 ounces Lambic raspberry beer (I used Lindemans Framboise)

Instructions

  1. Scoop the sorbet and frozen yogurt into a tall glass. Add raspberries. Slowly pour the beer, stopping halfway to let the bubbles recede a bit before pouring in the rest of the beer. Serve immediately with a straw and/or a long spoon.
