Italian Easter Pies

Serve a traditional Italian Easter Pie this year like this savory greens version with hard-cooked eggs baked inside or a sweet pie made with ricotta and arborio rice.

Wha?? Easter is less than two weeks away? I feel like it really snuck up on us this year probably since it’s right after the calendar changes over to April.

Egg & Swiss Chard Italian Easter Pie
Also known as Torta Pasqualina, if you want to go savory and wow your guests with the hard-cooked eggs inside, go with this traditional Italian Easter pie that I’ve given a healthy makeover to. RECIPE—> here.

Easter Ricotta Rice Pie with Raspberry Glaze
Know as Pastiera in Italy, this is kind of like rice pudding meets pie only so so much better. Ricotta, arborio rice and raspberries are the featured ingredients in this version I created. RECIPE–>here.

Or throw all caution to the wind and make both! That’s what I’m planning on doing (granted, it will be after Easter since my sister-in-law is hosting this year and I’m bringing a salad.)
