I can’t believe we’re on the 54th post of our Healthy Kitchen Hacks series.

When we kicked off the series in January 2015, Serena and I couldn’t have predicted how engaging these posts would be. Clearly, many of us love some kitchen shortcuts and those cool Pinterest tricks that actually work.

We’re working on a new way to deliver these hacks to you in the new year so stay tuned! In the meantime, here are my three favorite hacks from this week from three terrific dietitian food bloggers – let me know if you’d try any of these:

1) How to Use Those Potato Peels

Healthy Kitchen Hacks: Take potato peels and make potato latke waffles!

Admittedly, this would have been helpful for me to have shared prior to Thanksgiving, but if you are peeling lots of potatoes for a mash or another recipe, SAVE THE PEELS and make…..potato waffles!

Katie’s genius idea for Waffle Iron Potato Peel Latkes really works – all you need are those potato peels, an egg, salt, pepper and your waffle iron. I may throw in some shredded cheese with my next batch.

And while you have that waffle iron out, try these  Waffle Eggs or Waffle Quesadillas (I think I need to start a side hacks series for waffle iron uses….)

2) Make a Healthier Lemon Lime Soda

Healthy Kitchen Hacks: Better for You Lemon Lime Soda

In this Homemade Lemon Lime Soda recipe, Jodi uses a clever ingredient as the sweetener……. apple juice concentrate! This is a fresh and bubbly alternative to soda for the kids. Or if you need to use 7Up or Sprite as a mixer for holiday cocktails, try Jodi’s recipe instead.

3) How To Make Date Paste

Make a better for you sweeter - date paste!

I pinned this Date Paste recipe from Lindsay earlier in the year and figured I’d save it to try and share as a hack for holiday baking and desserts.

Also known as Date Caramel, you make the paste by soaking dates and then pureeing them with water. You can use it as a substitute sweetener in all kinds of recipes. It’s less caloric than other sweeteners (approximately 36 calories per tablespoon compared to 48 calories for sugar, 52 calories for maple syrup and 64 for honey) and a good source of fiber, potassium and magnesium.

I used it in my Peanut Butter Gingerbread by swapping in 1/4 cup date paste for 1/4 cup of the molasses to much success! And I have another FUN recipe using date paste I’m testing for Healthy Aperture next month….stay tuned….

I LOVE making date paste for recipes, but I never make a large batch ahead of time to save, well, time! I'll need to get on this for holiday baking! :)

I know! I went through the first batch fast - what kind of recipes do you use the date paste in typically? I'm a newbie user!
