Dried Plum, Ricotta and Avocado Toast | The Recipe ReDux

Dried Plums Ricotta Avocado Toast

It was two food trends that kickstarted this recipe:
* Avocado toast
* DIY cheese (In this case, homemade ricotta inspired by fellow ReDuxer, McKenzie @ NourishRDs)

As a dietitian, these are two ‘trends” I can get behind and now I’m predicting the next wave of popularity will come from dried plums (move over dates!)

When the California Dried Plums Board came on board to host a “No Bones About It” Recipe ReDux Challenge to kick off National Osteoporosis Month, I’ll admit I didn’t know much about their bone health connection – let alone their versatility in recipes.

Side note: If you are thinking, “Wait, are these the same as prunes?”, the answer is yes they are and here’s a fun fact:

All prunes are plums, but not all plums are prunes. Prune plum varieties have very high sugar contents that enable them to be dried without fermenting while still containing the pits.

But talk about a powerhouse of a fruit when you consider these dried plums benefits:

Nutrition perks:

—> One serving = 4–5 dried plums provides less than 100 calories, 3 grams fiber , 293 mg of potassium, 16 mg of magnesium and more vitamin K than any other fresh or dried fruit.

—> Dried plums help support healthy bones. Emerging research suggests eating 1-2 servings of dried plums may help improve bone density in postmenopausal women.

—> Dried plums can be a substitute for fats or sugars in recipes. Rule of thumb: reduce up to 1/2 of fat or sugar with prune purée.

Cooking/flavor perks:

—> Dried plums add moisture to baked goods and meat dishes while adding smoothness and flavor to sauces, spreads and marinades.

—> Natural elements in dried plums help heighten the flavors of other ingredients in a recipe.

I really found all these cooking benefits to be true once I got into the kitchen with my California dried plum samples. I loved their soft, silky texture after they were pureed, along with their naturally just-sweet-enough flavor.

Often when I make avocado toast, I drizzle it with honey so I created a dried plum viniagrette to replace it. (The key is using a good aged balsamic vinegar.) I thought I might have to add a touch of sweetener to offset the acidic taste of vinegar but the natural sweetness from the pureed dried plums was the perfect balance.

Dried Plum, Ricotta and Avocado Toast {The Recipe ReDux}

Description

Upgrade your avocado toast with ricotta cheese, black pepper and a dried plum vinaigrette drizzle.


Ingredients

Scale

For Dried Plum Vinaigrette:

  • 6 California Dried Plums (about 1/4 cup)
  • 2 tablespoons aged balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 34 tablespoons water

For toast:

  • 2 slices whole grain or sourdough bread
  • 1/4 cup ricotta cheese
  • Half of an avocado, sliced
  • 6 California Dried Plums, sliced (about 1/4 cup)
  • Black pepper
  • Sea salt

Instructions

  1. To make dried plum vinaigrette, place 6 dried plums in small saucepan with vinegar. Bring to a boil and then remove from heat. Let sit for 5 minutes.
  2. Add dried plum mixture to food processor or blender. Slowly add olive oil as blending/pureeing. Add enough water (continue to blend/process) until it reaches a creamy dressing like consistency.
  3. To assemble toasts, toast each slice of bread.
  4. Spread ricotta cheese over each toast.
  5. Layer avocado on top of each toast (or smash avocado into ricotta cheese.)
  6. Layer sliced dried plums on top of each toast.
  7. Season with black pepper and salt.
  8. Drizzle with dried plum vinaigrette.
  9. Store leftover dried plum vinaigrette in refrigerator for up to a week.

Bonus: You’ll have leftover dried plum vinaigrette from this recipe – it’s fantastic drizzled over salads, cooked chicken or pork, or as a spread for grilled cheese or other sandwiches.

I loved this vinaigrette over salad greens but it would be delish with spinach. I'm making a strawberry rhubarb dessert today and now thinking it would also be tasty over that too!

I saw someone do a fig toast with lots of black pepper so I knew I had to do that with this recipe :)
