Avocado Lime Popsicles

Ahh, I could do 20 posts on my love of avocados. So, why have I only recently have made them a true staple in my kitchen? In the past, I’d wait for a guacamole craving or a specific recipe using them as ingredient. But now, they’ve earned “banana” status in my fruit bowl – meaning, I have always have a few on hand, ripening and ready for use.

A few years back, I had the good fortune review this lovely book My Sweet Mexico by Fany Gerson. Her avocado ice cream recipe is simple and yet so divine. And avocado is a fruit after all, making it a no brainer for summertime desserts. I finally bought some popsicle molds (after reading Serena’s post) and my adaptation of the avocado ice cream was the first thing I tried.

Description

Creamy avocados are divine in desserts like ice cream or when paired with lime, these creamy, dreamy popsicles.


Ingredients

Scale
  • 2 ripe avocados, peeled and pitted
  • 1 cup low fat milk or reduced fat coconut milk
  • 1/4 cup sugar
  • 2 tablespoons lime juice (from one large lime)
  • 1/8 teaspoon salt

Instructions

  1. Put all ingredients in the blender and blend until smooth.
  2. Pour into popsicle molds and freeze.

I've never met anyone who loves avocados as much as I do! It can be used in salty or sweet recipes; thanks for posting this I'll definitely try it out! :)

These look delicious and perfect for kids! I love the idea of avocado popsicles, I bet they are nice and creamy, kind of like a fudgesicle?

Such gorgeous green popsicles! I think this would be a fun summer project to do with my kids. I think my daughter's first food must have been avocado. Delicious!

What an interesting use of avocados! I use avocados all the time - in salads, on top of burgers, on fish tacos...so many good ways to enjoy them!
