This recipe came about from a half eaten peach.

It was more like a large peach with two bites out of it thanks to dear daughter. Apparently when you are 7 years old, abandoning a juicy, fresh, local peach after a few bites is not a travesty.

She left it on the counter after dinner and as I went to finish it myself I thought, “I wish this was a peach cobbler, crisp or some type of lovely summer dessert.” And then I figured, why not make a single serving of such a dish right then.

So, how did this evolve into a breakfast?

A few weeks ago, I indulged in peach cobbler for breakfast and was not ashamed to document it.

And since we are in the middle of the Oats & Dairy: A Powerful Combination Recipe ReDux challenge sponsored by The National Dairy Council and the Quaker Oats Center For Excellence  (check out Serena’s 5 Minute Oatmeal Breakfast Custard and my Spinach Ricotta Breakfast Bake from earlier in the week), I figured I could add some better-for-you ingredients, swap out some of the usual sugar & fat and in the end, make the usual dessert breakfast worthy.

Breakfast Peach Crisp For One

Makes 1 serving.

Ingredients

  • 1 medium peach, pitted and chopped
  • 1 teaspoon honey
  • 2 tablespoons quick 1-minute oats (I used Quaker)
  • 2 tablespoons granola (I used KIND Fruit & Oat Clusters)
  • 1 tablespoon ground flaxseed
  • 2 teaspoons brown sugar
  • 3 ounces nonfat Greek yogurt, divided

Directions

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, mix together peach and honey. Place in 4 or 5-inch ramekin.
  3. In same bowl, mix together oats, granola, flaxseed, brown sugar and 1 tablespoon yogurt. Spoon on top of peaches.
  4. Bake for 12 -15 minutes or until crumble is golden brown. Remove from oven and cool slightly.
  5. Spoon remaining yogurt on top of peach crisp before serving.

After testing this recipe, I ate it for dessert and made another serving for breakfast the next day.

After all, peach season is almost over.

    I love having dessert for breakfast! ;P My favorite thus far may have to be tiramisu french toast. My friend told me about a cafe that made those, but it was several hours away from me, so I embarked on a mission to make my own. Definitely wasn’t disappointed! *-*

    That being said, I love this recipe! I don’t have peaches, but may try it with some other kind of fruit because I have a tonnnn of all the other ingredients that this recipe calls for! 😛 Especially granola.

    Thanks for the inspirational brekky idea, peach cobbler. We make this recipe all the time now. Brilliant idea to encorporate yogurt into the topping! Healthy, quick, easy and made with ingredients i always have in stock. Perfect recipe for my daughter that has a fruit allergy and can only eat cooked fruit. thx :-)
