    Great recipe and don’t think I didn’t notice the smoked paprika! :-) Seriously, I would love to try making these, and can’t wait to get cooking with my own batch of California Sweetpotatoes!

    Boy, you can’t go wrong with my favorite foods — kale, cilantro, and sweetpotatoes. I love tostados, though haven’t made them myself in ages.

    Oh man, sweet potatoes have got to be one of my all-time favorites. I love them for every meal but lately I have been starting the day out with half of a sweet potato topped with sauteed spinach and an egg over easy. It is delightful!

    Yum! These look mighty delicious! I’m trying to get my husband to eat more kale and what better way then to accidentally add them to one of his fav foods….tacos..or in this case, tostadas! ;). I’m more of a corn tortilla kind of a gal. People make fun of me bc I always order a side of corn tortillas just for myself when we go out to eat at Mexican restaurants. I don’t care. I think they’re so much more flavorful! Plus, I don’t need to pass them around the table..all mine! 😉

    Deanna…yum and so colorful! Can’t go wrong with the sweetpotato, black bean, cilantro and lime combo…and of course, Cabot cheese (adore all things Cabot). Will def try this. And need to check out Robin’s post on homemade corn tortillas too – have never attempted that at home and would love to.
