I. heart. honey.

I eat honey almost daily (sometimes more) – I usually start the day with peanut butter and banana toast drizzled with honey or a bowl of oatmeal flavored with honey. I add it to salad dressings, chicken dishes, roasted veggies, fruit desserts and on and on.  So, while I was giddy when the National Honey Board approached The Recipe ReDux about doing an entertaining and holiday recipe challenge, I actually had a hard time narrowing down what exactly to create because it is such a versatile ingredient.

Despite being a YO! Philly gal, I kid a lot that deep down I’m a Southern Wannabe (I’m unofficially under the tutelage of Alabama born & bred belles Regan Jones and Holley Grainger.) As such, I try to fill my pantry with Southern home cook staples. So, when my half used bag of War Eagle Grits caught my eye, I decided to whip up some sweet breakfast grits – a fun dish for causal brunches with friends and family or for a switch from cold cereal breakfasts when you are vacationing with a group at the lake/beach or even camping.

Now what I really love about honey is that it’s not just a sweetener, it’s truly a flavor enhancer. I enjoy experimenting with different varieties (bees gather pollen from different flowers thus giving their honey subtle flavors of those plants.) Currently, I have clover honey, which has a fresh, light flavor and sage honey, which has a deeper, almost smoky flavor. Someday, I’d love to do a honey tasting (much like a wine tasting.)

Honey Nut Breakfast Grits

Makes 4 servings


  • 2 cups fat-free milk
  • 1 cup water
  • 1 cup stone ground grits
  • 1/4 teaspoon salt
  • 2 tablespoons honey
  • 1 tablespoon unsalted butter
  • 1/4 cup almond slivers, toasted
  • 1/8 teaspoon almond extract
  • 4 teaspoons honey


  1. In a large pot, add milk, water, grits and salt; bring to a boil. Mix in 2 tablespoons honey and butter; reduce to a simmer and cook about 20 minutes or until grits thicken.
  2. While grits are cooking, toast almonds in a frying pan over medium heat, stirring often, for about 8 - 10 minutes or until they are slightly browned.
  3. Remove grits from heat and mix in almond extract. Ladle into four bowls; topping each with 1 tablespoon of toasted almonds and 1 teaspoon honey.
