When it comes to a trendy seed, chia seeds are totally ‘in’ in 2013. Nerdy in the 80’s where they were relegated to the top of a terra cotta Chia Pet® (you gotta watch this blast-from-the-past ad again!) the chia seed is on a current rise to super-stardom. According to this 2013 Food Trends piece from Cooking Light magazine, chia seed powder – or flour is to be ‘hot’ this year. One of my latest posts was on manifesting food trend predictions…but I find them so much fun to read, I had to try out another one, Cooking Light’s New Twists on Current Trends: Chia powder.
Just a year and a half ago, I’d never heard of chia seeds (until introduced to them by my fitness guru sister.) Now they are the darling of Pinterest, embraced by some of my favorite bloggers and their benefits are showing up everywhere from health magazines to cooking shows. I believe part of the little seeds’ appeal is they are bursting with another ‘trendy’ nutrient, omega-3 fats. And it probably doesn’t hurt that chia seeds are ‘being discovered’ on the heels of flax seed popularity – a seed with which they share other similar attributes.
So while we currently have no whole chia seeds recipes on our site, we are now ahead of the trends and have a chia seed powder recipe below. I just used my coffee grinder to whiz the whole seeds into a flour and they added lovely texture (but not too much flavor – which is good in my book because I always taste the ‘fishiness’ in ground flax seeds.) They also make the muffin color, well, rather odd. They aren’t really golden brown, they are sorta pale brown. But they are really delicious with the cinnamon and almond flavors…and my
trendy kids ate them up quickly.
