Cinnamon Almond Chia Seed Muffins -

When it comes to a trendy seed, chia seeds are totally ‘in’ in 2013. Nerdy in the 80’s where they were relegated to the top of a terra cotta Chia Pet® (you gotta watch this blast-from-the-past ad again!) the chia seed is on a current rise to super-stardom. According to this 2013 Food Trends piece from Cooking Light magazine, chia seed powder – or flour is to be ‘hot’ this year. One of my latest posts was on manifesting food trend predictions…but I find them so much fun to read, I had to  try out another one, Cooking Light’s New Twists on Current Trends: Chia powder.

Just a year and a half ago, I’d never heard of chia seeds (until introduced to them by my fitness guru sister.) Now they are the darling of Pinterest, embraced by some of my favorite bloggers  and their benefits are showing up everywhere from health magazines to cooking shows. I believe part of the little seeds’ appeal is they are bursting with another ‘trendy’ nutrient, omega-3 fats. And it probably doesn’t hurt that chia seeds are ‘being discovered’ on the heels of flax seed popularity – a seed with which they share other similar attributes.

So while we currently have no whole chia seeds recipes on our site, we are now ahead of the trends and have a chia seed powder recipe below. I just used my coffee grinder to whiz the whole seeds into a flour and they added lovely texture (but not too much flavor – which is good in my book because I always taste the ‘fishiness’ in ground flax seeds.) They also make the muffin color, well, rather odd. They aren’t really golden brown, they are sorta pale brown. But they are really delicious with the cinnamon and almond flavors…and my trendy kids ate them up quickly.

Cinnamon Almond Chia Seed Muffins


  • 2 tablespoons chia seeds ground into 3 1/2 tablespoons chia seed 'flour'
  • 1 cup all purpose flour
  • 1/2 cup oats, ground into flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 beaten egg
  • 3/4 cup milk
  • 1/4 cup canola oil
  • 1/2 teaspoon vanilla
  • 3/4 teaspoon almond extract
  • 1/4 cup chopped or sliced almonds.


  1. Line 12 muffin cups with cupcake/muffin paper liners.
  2. In a medium bowl, combine flours, sugar, cinnamon, baking powder, salt. Make a well in center of dry ingredients.
  3. In another bowl, whisk together egg, milk, oil, vanilla, almond extract. Pour wet ingredients into dry ingredients and mix just until moistened. Gently fold in almonds.
  4. Divide among 12 muffin cups.
  5. Bake in a preheated 400 degree (F) oven 16-18 minutes or until toothpick inserted comes out clean.

    Fyi, Step 2. Says to add baking powder but there is no baking powder listed in the ingredients?

    • Jeanette – thanks for pointing out our typo. We added the 1 1/2 teaspoons of baking powder to the ingredient list -sorry for the mistake!

          • My kids are all grown and out of the house but my grandsons (4 & 6) are staying this weekend and they eat pretty healthy as it is so I’m sure they will like them :) and I shared them with 2 friends and my sister and all gave thumbs up.

  5. This recipe looks very interesting! I’ve been exposed to Chia seeds for about 5 years and have enjoyed a drink with about 1 tbsp seeds, lemon juice to taste, pinch of sugar & 16 oz well chilled water. Stir well & let the mixture thicken a bit. Very refreshing!
