Fall Apple Salad with Apple Butternut Squash Soup

Does this happen to you? October hits and I can’t get enough apple, butternut squash and pumpkin into my recipe rotation. Luckily, this month’s #AppleLove bloghop is brimming with enough ideas to keep me going through the winter. And last month’s Recipe ReDux theme of dressings, condiments and spreads introduced me to my new favorite autumn salad vinaigrette. So here I combined a few fellow bloggers’ creations with my own spin on salad to create a “season pleasing” pairing.

Soup: Knitstamatic’s Roasted Butternut Squash & Apple Soup
     Deb of Knitstamtic blog is a co-host of this month’s #AppleLove blog hop and I wanted to make her version of this soup as soon as I clicked on it.
Butternut Squash Apple Soup

1 bag baby spinach or mixed greens
2 Gala apples (or any varitey) , cored and chopped
1/2 cup pecan halves
3 ounces applewood smoked gouda cheese, thinly sliced or cubed
WholeHealthRD’s Mapple Salad Dressing
     Nicole of Whole Health RD blog submitted this dressing to last month’s Recipe ReDux and it’s fantastic. So simple but perfect for fall.

  3. What a fabulous soup…I think it’s my favorite of all the squash/pumpkin soups I’ve seen this fall. And I think spinach salads always call for fruit and nuts…yum!

    PS…If I can make pastry wrapped caramel apples, I’m sure you can, too. I am not crafty at all!

  4. What a great soup and salad! I love the latte like swirl on the surface of the butternut squash – apple soup. A fantastic, healthy and fresh way to take advantage of the beautiful Fall apples!

  5. This looks beautiful and delicious…I just made butternut squash apple soup yesterday and I mixed in some of my apple date butter and it was awesome!
